Perfect Trio of Skewers Recipe

This recipe is the perfect addition to grilling season! These skewers are fast, fun and fabulous. Perfect for entertaining- Cheers!

Ingredients:
Harissa Chicken with Oranges (18 skewers)
  • 1 pound boneless, skinless chicken thighs, cut into 1 inch pieces
  • 2 oranges, cut into wedges
  • ½ cup Orange Olive Oil
  • 3 tablespoons Harissa Dip
Greek Salad Skewers (18 skewers)
  • 36 cherry tomatoes
  • 36 Greek Olives stuffed with Tzatziki
  • 9 Artichokes alla Contadina, cut in half
  • ½ cup feta cheese, crumbled
  • 2 cucumbers, thinly sliced
  • 1 teaspoon Tzatziki Dip
Halloumi & Veggie Skewers (18 skewers)
  • 18 Peperoncini con Pecorino
  • 18 Sunpomo Sundried Tomatoes
  • 9 Artichokes alla Contadina, cut in half
  • ½ pound halloumi, cut into 1 inch cubes
  • 2 tablespoons Chilli Pepper Olive Oil
  • Aegean Tapenade, for serving
Instructions:
General Instructions
  1. Heat the grill to medium high.
  2. Place skewers on the grilling surface. Turn during the cooking process to cook all sides evenly. Total cooking time is between 10 – 15 minutes. Cooking times will vary with ingredients used.
  3. Remove from grill when done and place on serving platter.
Harissa Chicken with Oranges
  1. Combine the Orange Olive Oil and the Harissa Dip. Pour over chicken, refrigerator for 1 hour.
  2. Thread ingredients on skewers. Brush with the marinade.
Greek Salad Skewers
  1. Thread ingredients on skewer.
  2. Sprinkle each skewer with Tzatziki Dip.
  3. Serve skewers over sliced cucumber and crumbled feta
Halloumi & Veggie Skewers
  1. Thread ingredients on skewers.
  2. Brush with the Chilli Pepper Olive Oil
  3. Serve with Aegean Tapenade
  4. Note: Leave a small gap between each piece to ensure that pieces cook thoroughly.
